Traffic Jam & Snug is a landmark restaurant and pub in Detroit, and if you’re in the know, you know it’s a lot more than that. It’s also a bakery where they make incredible breads, a microbrewery that was Michigan’s very first brew pub, and last but not least, a dairy where they make award winning artisanal cheeses.
When we were there, we met up with Chris Reilly. Not only is Chris the brew master at The Traffic Jam, he’s also the resident cheese master! When Chris isn’t making award winning beer, he’s making some of the best cheese you’ll find anywhere. And if you’re a foodie, they periodically offer classes where you can learn how to make your own cheese right at home.
This really is a fun and educational experience. Chris took us through the entire hands-on process of making cheese and explained both the history and science behind it. From mold spores and coagulants to fat globules and protein matrices, we learned it all and made a beautiful batch of asiago blue cheese.
